Mustard Beans (Sweet & Sour Wax Beans)
- 2 quarts wax beans (yellow string
- 1/2 cup sugar
- 1/2 cup cider vinegar
- 1/2 cup water
- 2 T. prepared mustard
- 1-1/2 tsp. flour
Cook the beans in salt water just until
tender - do not overcook. Set aside.
Whisk the other ingredients together in a large
saucepan. Bring to a boil and continue cooking for about
one minute. Pour over the cooked beans. Cool, then refrigerate the mustard beans. Serve chilled.
