- 3 eggs - separated
- 1/2 cup butter
- 2 cups sugar
- 2 tsp. baking powder
- 2-1/2 cups flour
- 1 cup milk
Grease and flour 2 - 8" or 9" round layer cake pans. Beat the egg whites until stiff; set aside. In a bowl, mix the egg yolks, butter and sugar together. Beat at medium speed for about 2 minutes. In a separate bowl, mix the flour and baking powder together. Add to the other ingredients, alternately with the milk. Mix well, then beat hard for 2 more minutes.
Fold in the beaten egg whites. Pour the batter into the prepared cake pans. Bake in a preheated oven at 350º for 30 to 35 minutes or until the cakes spring back when touched lightly in the center.
This cake is especially good with vanilla frosting, topped with a generous amount of coconut.
