Peanut Butter-Banana Boat Dessert
  • 4 bananas, unpeeled
  • 1/2 cup peanut butter, regular or low fat
  • 1/2 cup chocolate chips, semi-sweet or milk chocolate
  • 2 T. chopped peanuts
Preparation -
Arrange 4 pieces of aluminum foil, with the edges rolled and folded under for extra support, on a cookie sheet. Slice each unpeeled banana lengthwise. Place 2 banana halves, side by side, on each piece of aluminum foil. Spread each banana half with peanut butter. Sprinkle chocolate chips on each one. Bake in a preheated oven at 450 for 5 to 7 minutes or until the bananas are soft and the chocolate chips are melted. Top with chopped peanuts before serving. Serve warm, using spoons to scoop the baked banana mixture out of the peels.

Microwave directions - Place each sliced banana on a microwave safe plate. Spread with peanut butter. Top with chocolate chips. Microwave on high for about 45 seconds, or until the chocolate chips are melted. Top with chopped peanuts before serving.
