Potato Salad


8 potatoes, boiled and peeled
4 eggs, hard boiled,peeled and cooled
1/4 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped dill pickle, and some reserved juice
1/2 cup italian dressing
salt and pepper to taste
1/2 cup mayo (added at time of serving)
1 tablespoon mustard
1/2 teaspoon dill
1/2 teaspoon paprika


Combine all ingredients except the mayo.
chill overnight. add mayo before serving.
Keep container on ice to prevent internal
temperature from going above 40 F.
Serves 10-12.
