Pork Chops Baked with Apples and Onions



Ingredients:


1 teaspoon vegetable oil
4 pork chops, 1/2 inch thick
1 medium onion, peeled and thinly sliced
1/4 cup sherry
1/4 cup apple cider
3 large McIntosh apples, peeled, cored and cut into 1/4 inch slices
1/2 teaspoon kosher salt, plus more to taste freshly ground pepper to taste

Directions:

Preheat oven to 350 degrees. heat the oil in large ovenproof skillet over medium high heat.
Add the pork chops and sear until they are golden brown, about 1 1/2 minute per side.
Remove the pork and set aside. Saute the onion in oil for 2 minutes stirring often, add the
sherry and the cider or just the cider and cook, stirring constantly. Add the apples, salt and pepper.
Turn the heat down and simmer for five minutes. Return the pork chops to the onion/apple
mixture adding any juices that accumulated. Cover with foil and bake for 15 minutes or
until pork chops are tender and cooked throughly.
