Irish Beef & Beer Stew


2 lbs. beef sirloin, cut into 1 inch cubes
4 tbsp. butter
1 tbsp. vegetable oil
5 large potatoes, peeled & cut in 1 inch cubes
8 carrots peeled and sliced
4 cups quartered onions
9 tsp. white flour
2 3/4 cups canned beef broth
1 1/2 cups dark beer of choice
1 tbsp. thyme


Sprinkle fresh cracked pepper over beef and
saute in large skillet in melted butter and
oil until brown over high heat. After beef
is browned, transfer to a bowl. Reduce heat
to medium and add carrots, potatoes, and
onion to skillet coating with pan juices.
Add the flour and stir in well. Add the beef
broth and beer. Pour meat and juices from bowl into
this and cover skillet. Simmer on low
heat for about 30 minutes, stirring occasionally
until tender. Garnish with fresh thyme leaves.
Serve with irish soda bread or bread of choice.
