Ham and Scalloped Potatoes


3 cups very thinly sliced, peeled potatoes
1 tsp. salt
3-4 cups left over ham, minced
1 small onion, minced
4 Tbl. flour
6 Tbl. butter
1-1/4 cup milk or cream
1-1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. dry mustard
grated cheddar cheese


Preheat oven to 350 degrees.
Drop potatoes into boiling water and parboil about 8 minutes.
Drain well. Meanwhile, saute onion and ham until onion is
cooked and transparent, about 3 minutes. Place 1/2 the potatoes
in a layer on the bottom of a 9" or 10' baking dish.
Sprinkle 2 Tbl. of flour over potatoes and dot with 3 Tbl. butter.
Layer 1/2 the ham-onion mixture over the potato layer.
Sprinkle with cheddar cheese. Repeat layers. Heat milk or cream and seasonings.
Pour milk mixture over entire baking dish. Bake about 35 minutes. Serves 6.
